My Cozumel breakfast is peanut butter and strawberry preserves on toast with a glass of orange juice.
 
Girasoles. Actually we sometimes eat lunch there (air conditioned and good hot keep your cup full coffee) but they are more known for breakfast.
 
Back when we were visiting the island frequently, I "discovered" Huevos con Chaya at Casa Denis.

Chaya is colloquially known as (chose one): Mayan Spinach or Mexican Spinach.

For Huevos con Chaya, the Chaya is precooked (it can be toxic if not), and then folded into an omelette.

I became such a fan that we now grow Chaya at our house here in Central Texas.

Last time we were on the island, we stayed at the Park Royal, and one morning in the omelette line, I asked the chef if they had Chaya. She smiled, went to the kitchen and came back with some.

Every morning after that, when she saw me, she would head back and bring it out just for me.

Don't know if Casa Denis still has it on the menu, but if you are looking for a unique breakfast, I strongly recommend you check it out.
 
I like Abuelo Gerrados for my huevos con chaya, tomato,e quesso.
 
I like Corazon Contento a lot. The chilaquiles negro are excellent, as are regular chilaquiles and eggs. I don’t recall right now if they have huevos con chaya, but if they do, I will have to get it. I first had it at the old museum restaurant some years ago. My wife got an English menu and I got a Spanish menu. We discovered that some items, including huevos con chaya, were not on the English menu.

As much as I like it, it doesn’t work for breakfast before a 7:30 pickup at Villa Aldora, so it’s always part of my last day ritual.

We also like the baked goods at Maple Bakehouse and Zermatt. I also like coffee at Coz Coffee Roasting and the staff there is always great, although it’s usulally for an afternoon coffee while wandering town shopping.
 
My typical breakfast is a sandwich from either the blue stand on 11th near the circle on 10th or a Cochanita torta from Mario's on 5th & 35th. The other alternative is a vendor in the Marina parking lot. Unfortunately most restaurants open to late to allow for an 8AM morning dive. Many times I have been to the various restaurants that state they open at 7AM only to find that it means the staff starts wandering in at 7AM and are not ready to serve until closer to 7:30 AM. The exception to this is Casa Mexicana who have always opened promptly at 7AM, when I have been there, which allows a half hour for breakfast. Does anyone else know of a breakfast restaurant in the central area that consistently is open and ready to serve breakfast prior to 7AM?
 
or you can stay at a B&B that caters to divers and fixes tasty local bfast dishes...:)
 
<shudder> 0730?! 0800?

The obvious solution to the dilemma of finding breakfast before diving is to dive at a civilized hour, such as 0900.
For myself civalized would be around 6AM. It doesn't matter I wake at around 4AM. Would love to do sunrise diving, unfortunately most people have more sense than I.:D
