Should I incorporate as an assistant instructor or instructor?

I can only tell you what I was told.

While instructing, you are on the hook no matter how you set things up. Setting up an LLC is cheap and you can keep expenses/income that relate to teaching all in a separate bank account.

If you are an independent instructor and allow students to use/rent gear get air fills etc, run it all through the LLC. That way the LLC will give you some personal protection if something goes wrong with the gear/air/etc. If you do rent gear there will be an additional insurance requirement so keep that in mind.
