Why do people add a few minutes to their last deco stop?

What conditions do you take into account when you decide to modify your GF hi
Lots of good examples in this thread of when I might want to modify the GF Hi during the dive. Off the top of my head here's what I recall:
  • buddy still has deco
  • pretty fishes
  • worked extra hard during dive
  • DCS symptoms
 
Feeling dehydrated might be a good reason.

There's a whole lot of pushing of various computer buttons going on here and what seems like very little accounting for gas. Time doesn't matter if you have gas. If you don't have gas - welp again time doesn't matter.

What would you suggest I change about my approach? Obviously whatever GF I set I would plan appropriate gas for.
 
Feeling dehydrated might be a good reason.
I am always dehydrated on three hour dives because I don't use a p-valve :)

I thought it was normal to have twice as much gas to complete the deco in your bottle, in case your buddy lost his bottle.
 
If you have planned gas with appropriate reserves, and you come to the end of your final deco stop without any sort of incident, then you should have oodles of gas. If you feel like saying, "What the Hell? I'll hang out for a few more minutes," then why not?
