What do you bring on a dive boat?

Depends on the size of boat and who owns it. Most charter boats I've been on encourage you to bring as little as possible, coolers would be frowned on severely and alcohol is disallowed.

Private boats are pretty much anything the owner allows, but my main captain buddy (CG certified) still doesn't allow alcohol even though he is usually a slosh. As he puts it "I can't drink and I ain't watchin' you guys drink".
 
Definitely bring one of those large plastic totes big enough to hold several bodies.
Put it in the middle of the deck.

Most boats around here (all but one that i can think of) allow alcohol on board.
As for coolers, not usually a problem.

Of course re: alcohol it is used as a signaling device.
