Actually, both the Travel and the Venture wings are designed for warm water diving. However, with the new lift capacity, the Venture wing is now better able to transition to cold water diving and/or usage of a steel tank. The Venture wing was originally designed to use with a hardplate (such as the TransPlate) with a single tank. That feature has not changed and it would be an ideal wing for you.
In terms of lift, the Venture wing is not too big for single tanks. Because we changed the side panels and did not make the size of the wing bigger, the streamlining and buoyancy characteristics have not been altered. Simply, you have more "oomph" should you need it when diving with heavy weight and/or steel tanks.
If you were to try to dive the Classic wing or the Rec wing (without using the Gusset Control System), you would have a heck of a time with a single tank. Not so much because of the rated lift capacity, but because of the shape of the wing that is required in order to reach that rated lift capacity.
I would recommend the Rec wing only if you are primarily diving double tanks and need a wing for occasional single tank dives.
Finally, when comparison shopping, be sure to look beyond lift capacity and shape. Material construction is important in terms of life support equipment. A key component of all Dive Rite wings is the inner bladder material. Constructed of thick, 15-mil polyether aromatic polyurethane it is resistant to abrasion and chemicals, has excellent strength and will resist the growth of microorganisms. Alternate materials are known to delaminate over time, which creates an enviroment ripe for degradation, leaks and tears.
Keep the questions coming...all good ones!
