I personally don't know much about octopus books, but check out

They have some book reviews there and it is a fun place to visit. Lots of cephalopod fanatics.

While it's too much for a 7-year-old, my favorite octopus book is Cephalopods: A World Guide by Mark Norman http://www.amazon.com/Cephalopods-World-Guide-Mark-Norman/dp/3925919325
It's got pictures and descriptions of nearly every known species of octopus & squid, plus information on behavior and life cycles.
