For the salinity I would set it to what you are diving. Fresh, salt, or brine - my understanding of the EN salinity is a standard European measurement of the mixture of salt and fresh water sometimes encountered.

If you have it set to EN13319 and you are in fresh water your depth displayed will be lower than actual.

For the middle row I change it often - currently set for Max depth/ppo2/DET

Oh good gosh, salinity doesn't matter outside of an ego stroking competition.

The depth display is just an interpretation of the hydrostatic pressure you've been exposed to based on the salinity, and at the end of the day, the pressure is what's important, not the little number that says how many feet (or meters) it was.
