If someone is booking at short notice they should expect to encounter some restrictions IMO.
I'm guessing that if the resort has plenty of availability they will be very willing to design a package to work with your requested dates - but if they have limited availability and are likely to sell out soon - then they will insist on "Full week only, Saturday to Saturday!"
I don't blame them, if they sell a short stay or a midweek package close to the arrival date, during a period of high-demand, then they will likely have to turn down other customers that are asking to stay for a full week during the popular days of Saturday to Saturday.

I'm not going to wait until the last minute hoping to get the dates I want and risk not being able to book elsewhere at that point.
