Well if you aren't going to use the hotels dive op you could see if Christy has some room? My wife and I will be diving with them for some of those days and we're from Chi-town too.

You have a multitude of good options but I'll have to second Blue XTSea.

We'll be at FA the 7th - 16th and I'd recommend Scuba with Alison. We've been diving with her for 5+ years, as she'll be picking us up every day at FA. As you can tell by the March list a bunch of SBer's are diving with her, so it's possible the boat may be full. Although it can't hurt to check! And as already noted above, Blue XTSea comes highly recommended as well!
