Please bear with me on this one. So after researching, I am down to Witherspoon and Willis. Both seemed reputable but I know the coverage between them is different I.e. claims made vs occurence.

which is "better"?
 
Go with Witherspoon. I have friends with first hand experience of how Witherspoon goes the extra mile when things go badly.
 
Just make sure NAUI accepts the insurance a few years back I think one of those was not accepted by NAUI- not completely up to speed on the US side of the house on insurance though.
