I would just go to a sheet metal shop and ask to use a break...they would probably let you use it for free for the amusement factor...

11 gauge SS is a bit stout for most "sheet metal" shops.
A conventional brake is useless for "unbending" and a press brake will require flattening dies. Not all fab shops have these seldom used dies.

I already own a plate from "that guy"
That's the plate I bailed to when I wasn't happy with how the Halcyon plate fit. Had some very enjoyable first doubles dives with it
The shallower bend in the DSS plate of course allowed the plate to fit snuggly to the tanks and allowed plenty of room for the V-weight.I'll post back with any updates.
