To each their own, but La Perlita in Cozumel does a great job with lionfish. Very fresh and tender, can be cooked several ways (fried in coconut batter is my favorite). I'm a bit picky about seafood, but their lionfish is not fishy tasting and is actually more mild than most fish (fresh or saltwater) I've had, and actually probably more mild than shrimp.Nope.

Snoweman, you need to try lionfish ceviche again, made by someone else. Lionfish has a lovely sweet flavor, and made with barely enough lime to cover the fish, it’s about the best ceviche going!
