There are several small pastries shops on that side of town just a couple blocks up from Melgar. Ride the bike up and down the streets and you'll find lots of places.
 
Thanks all for the comments. I switched my reservation to Villas. Ironically, I am an avid cyclist so ~1 mile ride into town is almost a selling point. Plus I love a resort feel so I am excited.

Where is a good place for pastries/donuts/breakfast breads? I'll load up on the first day and have a great week :)

My wife and I stay at the Villa and put maybe a hundred miles on the bikes in a week. We take them everywhere. Don’t forget to bring little bike lights for increased visibility at night.

Do you recommend riding on sidewalk or in the road?
 
In most areas the sidewalks and very skinny and loaded with obstacles/broken concrete.

Sidewalks are very dangerous in many parts of Mexico! Probably take out more folks than the cartel.
 
+1 for riding in the street. Dealing with cars is hazardous, but way easier than dealing with peds, parked scooters, and vendors. Also, the traffic is used to having different user types going at different speeds in the street. They will seriously balk at a bike on the sidewalk, I would imagine.

You'll need to get used to the foot break if you've never used one before and just figuring out the traffic flow such as who has the right of way.

Yes, as others have said, stay on the road and off the sidewalk. Once you get off Melgar, most of the streets are one way. Just take your time, figure out the system and it’s really pretty easy and I feel, safe.
Half the bikes at the Aldora have gears and hand brakes. They have an air pump, bike locks and I believe helmets if you’re so inclined. There is some bike chain lube as well.
If you’re really up for an adventure, take the bikes on the jungle road to Isla Passion. It’s awesome. The pavement ends after a few miles and turns into a flooded gravel road. Do it in the middle of the day when it’s like 95 degrees out and 100% humidity. Don’t take any water with you, either. Hopefully once you get to the ferry at the end of the road, you will realize that the ferry closed a half hour before you get there. Good times. We did this three weeks ago, give it a try.😂
 
Thanks for the tips on biking. I had assumed to ride in the road but wanted to make sure there was not an expectation to be on the sidewalks.
 
I am currently diving with Aldora and staying at the Casa Mexicana. Its really convenient being 1 minute from the dock. The room here is great, and the breakfast buffet is very extensive. There is a 7- 11 right next door and several drug stores within 5 minutes walk, so that's useful too. Yes, the DM has a diver share so the dive doesn't get cut short. I can vouch for that because I've been that diver. If I stay deep for a long time, or have a very strong current dive, I end up having to share. I've done morning dives other than one afternoon and night dive. What no one mentioned is that the DMs often ask what site do you want to go to, or what do you want to see. For me, yesterday, that choice,was taken away when the other three divers had way less experience than me. But it didn't matter to me as I only came to gain more experience in currents, which I've been getting in spades. I switched to Adore because my favorite DM moved there. And I'm so glad I did. Longer dives, freedom in sites, diving the Cathedral for the first time, dive coats! Usually no more than 4 people in a group, and my equipment set up and cleaned and checked if there is a problem. All the DMs are super friendly and offer advice and are very knowledgeable. Its a great shop to be diving at!
 
What no one mentioned is that the DMs often ask what site do you want to go to, or what do you want to see.
Perhaps it wasn't mentioned because that is pretty much the norm for small boat Cozumel dives.
