Its better to be hot than cold. You can always open up the neck and let cooler water flow down your body. I also hate the cold.

I use a 5mm Oceanic long arm/leg wetsuite. When I get a bit cold I also have a long sleeve Lavacore which makes a big difference. When the water temp drops below 65 I also wear a 3mm shorty and hood.

I often in Winter wear a 3mm shorty, 1mm lavacore, 5mm full plus hood boots and gloves. Yes I hate being cold :). But the best thing about wearing multiple layers is I am prepared for any condition.
