At that time of year favourite restaurants tend to be ones that have an outside patio on the water. Food is somewhat secondary.
 
Yaletown area and Commercial Street are probably best for smaller, unique restaurants. If you do take the seabus to Lonsdale Quay there are 4 or 5 restaurants in the lower Lonsdale area. If you have a car and want to visit a suspension bridge the one in Lynn Valley is free. What area of town are you staying in?
 
You can take a passenger ferry harbour to harbour as well. This is a new service so have never done it.

The car ferry is not really a day trip option as you will spend most of the day traveling- even if you have a car. On foot it is actually relatively simple and takes the same amount of time. But if you miss any connection you miss a ferry and you add another hour to the trip.
 
If I’m free I’d love to show you some of the dive sites in Victoria. Although not necessary, a vehicle is nice to have to haul gear and get out to the sites. Feel free to pm me and I can give you details of the sites, getting around and the amazing restaurants here.

Another option for travel to/from Victoria is via seaplane from harbour to harbour. Google Harbour Air.

If you do go to the North Shore on the seabus you can catch a bus from Lonsdale Quay to Grouse Mountain. Grouse is quite commercial but the skyride up the mountain is worth it if you've never seen the city from the North Shore mountains. Alternatively you can take a quick detour up Cypress on your way to Whistler if you rent a car and do that trip. If you don't want to go all the way to Whistler the drive from West Vancouver to Squamish follows Howe Sound and is quite scenic. There is also another gondola at Shannon Falls near Squamish.

As far as museums go I'd have to say that Vancouver is not that great aside from possibly the Museum of Anthropology at UBC. Maritime Museum is OK if only to see the St. Roch, the RCMP boat that navigated the northwest passage.

If you like sushi there are a lot of small restaurants that serve up excellent fare.

There's a decent Mexican restaurant in Gastown, but you'll find it a bit pricey compared to a taqueira in Cabo or Cozumel. There are some great Thai restaurants, Persian restaurants, Italian restaurants, Greek restaurants.....it just depends what your tastes are. I'd suggest you wander and just look at the menus. Competition is quite fierce in the restaurant business and poor establishments just don't stay in business, particularly in the downtown area where you'll be.
 

Thanks. I looked into booking it, and it appears that they go Victoria to Vancouver in the morning and then return in the afternoon. I wish they had another ferry that was running the opposite trip. Right now, I'm thinking the helicopter is the most viable method of doing Victoria in a day.
