Should I buy 2x steel HP120 tanks?

Yes. You can dive monster tanks like LP120s or 131s and super size their capacity by overfilling every time. Or you can get a simple gas extender like the pSCR based GEM and use a single aluminum 80 to get the gas equivalent of a set of double 120s. There are ways to extend gas supply and take up less room other than super sizing your tanks or fill pressures.

I don't know what he is planning to do with the tanks but spearfishing on a breather is against the law in Florida. Plus I personally think the bubbles help scare off the sharks some. At least that is what I tell myself.
 
I ended up going with 2x LP-85's - they trim nicely.....like..very nicely. I think I made a good choice. Thanks for the various bits of information guys. Over time my SAC rating will keep improving (after getting used to the new gear) and that's how I'll extend my bottom time. I decided to go sidemount as well. It's pretty fantastic. Boat diving with sidemount was a huge learning curve - kinda gotta do things differently, but it's worth it to me anyway.
