whats the chances of actually seeing a great white cruise past like that on a dive in CA?

In 42 years of diving Catalina I've only knowingly had it happen once. A 14 ft GWS cruised behind me as Wyland and I were filming giant sea bass. Since it was behind me, I didn't see it but Wyland did.
