Both those sites are commercial sites. I don't know the websites for them, but I'm sure you can find info on them from the internet. OW classes are often taught at these locations, so they are good for everyone.

For those seeking cheap accomodations they do have a bunk house. FYI the Grotto is not spring fed, it is a sink hole.
Bird's Underwater for Manatee Diving:

Dove with them last Christmas and it was fantastic. Book ahead if you want a morning dive (the best time to see the Manatees).
Vortex Springs:

If you go to Vortex take time to drive a couple of miles to Morrison Springs which is a beautiful dive site and not so commercialized.
Good general information on Florida's Springs including directions and whether or not each site is open to open water or cave/cavern certified divers.
