Can the seat be replaced on this one? Is it the same as the seat in the S-Wing poppet? Is the o-ring the same as one of the two o-rings in the s-wing poppet?

Yes and yes. The seat is actually available as a separate part from SP; it's about $4, and Bryan has the aftermarket ones that work fine if you can't get a dealer to sell you the seat.

Regarding the balance chamber o-ring, a decent test is to put the balance chamber on the poppet, not pushed in but just enough to seal, then cover the hole in the seat with your thumb, then push the balance chamber in, if it springs back, you got a seal. Another, better test is to pressurize the reg and submerge it, you don't even need the diaphragm or cover on, then look for small bubbles, one every few seconds, coming from the air barrel.

You've got this thing apart, just replace the o-rings and seat. You could re-use the o-rings, but since 90% of the rebuild work is now done, and the o-rings will cost a few $ at most, why not completely rebuild it?

One more question. In my zeal to check this thing out, I acidentally broke off one of the little retaining clips on the orifice retaining ring. Will this hurt or are these just to hold it in place until the cover is on?

I was thinking that since I will be spending postage to get the new seat anyway, I may as well buy the balanced adjustable upgrade kit from VDH so that I can have the latest poppet and balance chamber.

I don't know what part you're talking about, maybe post a photo. There is no "orifice retaining ring". You might be talking about the friction ring that sits between the diaphragm and the cover, if so, don't worry about those little tabs.

Sorry wrong term. I meant to say diaphram retaining ring.

That "spacer ring" functions as a thrust washer so you can tighten the front cover without disturbing the diaphragm. It should be no problem.

Unless you're talking about that little pin (item #39) on the side to keep the cover centered; if that's the case, just ignore it. If it's a tab on the diaphragm ring (#18), don't worry, you'll live. However, if it's the whole ring that's broken, I'd replace it.
