I tend to go with the thinnest pair of gloves I can get away with, using them mainly for protection from scuffs and cuts when my hands are wet than anything else. Even in our California winter time water I tend to stick with a pair of 3mm gloves with some sort of a "kevlar-like" lining.
I get asked about the difference between a 4mm and a 3mm or 5mm glove or suit frequently, and while some are understandably more sensitive to the temperatures than others, generally I'll answer them that 1mm of neoprene is about the thickness of a piece of construction paper. There's not a whole lot of difference in them and it totally boils down to personal prefernce.
