You've certainly chosen the right spot. I learned to dive in there and even in January, whilst it was a little on the chilly side in the water, it was still pretty sunny and warm.
I have since been back a couple of times and am planning to do a liveaboard there in May...
There is another company that do really good holidays, with a choice between land-based, shore-based or the half and half that you would like, and they are Tony Backhurst:

They also have a last minute email notification thing that you can sign up for where they tell you about the latest deals on offer. Some good reductions. The boats are also top notch, really sleek, comfy with all the facilities you would need, even internet access!!!

I was last there in July which is truly FANTASTIC... it is hot, around 35ºC and the sea is around a lovely 28ºC hmmm. On one dive saw a bunch of hammer head sharks, followed by 3 reef sharks, that is on top of the stunning wall of coral that we were following. This was in Tiran, Jackson reef. Shark and Yolanda reef in Ras Mohammed also proved incredible as we hovered in a shoal of snapper that form a wall between the two formations of coral. Of course these would be after you did your initial local check-out dives, which you would probably do during the shore-based start of your holiday. I guess it would be a good idea doing the shore-based section first, for this very reason.
I have also dived in Hurghada which was equally spectacular, I only did a couple of local dives, one nick-named "the aquarium" for reasons that become obvious the minute you even look at the water and see the hoardes of fish swimming around. This was my first ever dive, which was certainly a good introduction really.
