Can't comment on 3mm gloves because I believe that both of my pairs of cold water gloves are 5mm (if I recall correctly)
I started with a pair of Mares gloves, and they were okay, but they were difficult to put on and very difficult to remove, especially when wet. They allowed a lot of water exchange when flexing my hands.
My buddy is a huge fan of Henderson Gold Core stuff, so I bought a pair of Gold Core gloves. They definitely are a lot easier to put on and take off, but they still allow a lot of cold water exchange. Just my two rupees.

PS: When I see "Insta-Dry" I don't assume that they are gloves that would keep your hands dry, just gloves that dry quickly.
