Does wing shape matter?

I just don't log dives
I have noted that some wings are trapezoid shaped (Dive Rite Venture, DSS Torus 35) and some are not (Dive Rite Travel EXP, DSS LCD 30).

What are the practical differences, if any, between these shapes? Why would you choose one over another?

The venture wing gives more lift at the hips and the horseshoe wings give more lift at the head.
 
is it a subtle difference, or is it fairly dramatic?

Ok, that's kind of obvious, but what practical difference does it make? Do some people have more buoyant heads than others?
 
...additionally, I prefer donut-shaped aircells over horseshoe-shaped aircells as it helps eliminate air-trapping, making it easier to vent the wing....I've also noticed it noticeably easier for me to rollover/maneuver with a donut-shaped aircell as the air flows easily from one side of the wing to the other....I've noticed that when I'm in the traditional face-down horizontal position, that horseshoe wings provide more resistance to rolling out of the face-down position...it's almost like they are 'too-stable' and want to keep you in the flat face-down orientation.

I found my GF has a buoyant head... Must be filled with air
