Interesting about the chopsticks.... people down here don't typically use chopsticks.

Most of the local noodle shops / stalls / carts in Phuket (where we regularly eat from) do have chopsticks on the tables in the long stainless steel boxes. But as you said, the majority of Southern Thai people tend to prefer the use of spoon and fork.

You can search for salt water crocodiles at Koh Juang, Samaesan near Pattaya. The dive may be crap but that ought to add a little excitement, particularly in the low viz conditions in this area.
