How often do you actually get a full tank fill?

Because lp72s are a 2200 psi tank and plus rated at 2420.... Being 50 years old with some of the thinnest walls ever is another reason to not go crazy overfilling them. They are hydroed at 3600

While they are all close, not a single measurement you gave is correct.
Cylinder pressure is 2250
Working pressure is 2475
Hydro pressure is 3750

Filling them to 3000 will not hurt the tank. They don't like 3600 fills and will eventually fail hydro if they are filled that way for years.

I run a fill station and rent Al80s, and charge $6 per rental. For $6 my customers get a tank that was filled to 3150 and allowed to cool to somewhere around 3000. No, I'm not going to top it off again, no I'm not going to mess with my auto-shutoff switch just for one customer with HP tanks. It's called being the only game in town, and my customers appreciate getting very clean air in well serviced tanks for a reasonable price.

2250 stamped on the tank and 2475 with 10% overfill.
3000 all day long, gives you an 86 then.

I was sleepy and going from memory. I only have one of them now, although I have bought a couple here and there used. Several have failed VIPs (before I could even fill them) as the allowable pit depth is pretty minimal given how thin the walls are. I wont try to recall that pit depth as I looked it up years and years ago. My current one is filled with emergency O2.
