I have dove with Sunset Divers several times. They have very good proceedures for handling new divers and integrating the boat with advanced divers as well.

I would have to say YES to both. They are in a competative market with their own resort guests but bring in cruise ship people who show up.
They try for the best dive sites like all the other operations on the island.

Give Giles at Wall to Wall a call or check out his website: Wall to Wall Diving - Personally Guided Diving at its Best in Grand Cayman

He offers personalized service and doesn't cater to the cruise ships. Since you will be there for several days, you will have quite a bit of say on the dive sites. He set up a night dive just for us and he offers the Cayman Rover which will give you a three tank dive to the East End if the weather is good enough to get around the island.

I was very impressed and pleased with the experience. I wrote a review further down in the forum.

For anyone who's still looking for GC dive ops.... I'll throw my recomendation in for Neptune's Divers. I dove with them last year and had a great time. They can work with a cruise ship schedule, they have small-pax boats so there's no chance of having a "cattle boat" experience, and the crew (and owners) are excellent!

they are more of a personal service type operation. They are not large. Their boats are 6 passenger max.
