You know, I let folks set up my gear. Then I check every single part of it to make sure it's set up the way I want it and everything is working properly.

I set up my own gear. There are about 5 people on the planet I'd trust to do it for me, not that I'd want them to set it up, but I would let them in a pinch. There have been about two times I've gotten on a boat and found my gear already set up. I immediately break it completely down and set it up myself.
 
That's what Tenders are for.
 
Having assisted someone in reinserting their cylinder into their BC 20' below the surface at the beginning of the dive (after setup by the crew) - I always suggest at least double checking the set up - preferably do the set up yourself. I've noticed the crew, in their haste, can be a little cavalier about slinging the salt water drops around open 1st stages.

Me, me, I do...
If I can't avoid their "doing it" then I explain to them as I'm disassembling and reassembling the gear that, while I appreciate their effort, it takes me less effort to just assemble it, so would they please KEEP THEIR HANDS OFF it, thankyewverymuch. :)

I have several people I would trust to set up my gear, but I can't see any time that it would be applicable. I've never had anyone else set it up for me.
 
When I am Diving with the Fire Dept. Team we have Tenders that set up the gear, however I always check it after it is set up. When using my personal gear, Nobody but me sets it up.
 
I just about trust myself with my gear. Even then i check it after setting up and again before kitting up.

Anyone trusting their gear setup to someone else blindly is quite bluntly an idiot.
