Considering taking a cruise out of Galveston in January. Going with my parents and non-diving wife. If I can only escape them for one day of the trip to dive, which port should I do - Key West, Freeport, or Nassau?

I think it's about 5-6 miles from the port.

They also do a Dolphin Dive program. Or a regular 2-tank dive.

I personally found more to do in Nassau than Freeport as far as non-dive cruise activities. There's the whole Atlantis mega-resort/casino, nice beaches, the Fort etc. Atlantis has the dolphins, Manta feedings, the aquariums etc. so it's almost like diving.

The Port is walking distance from downtown Nassau also - as I recall Freeport was sort of industrial - Port Lucaya or downtown around the casino seemed to be more active. That may've changed as I haven't been there in at least a decade.
 
My vote is Freeport. The topside activities in Freeport are limited (in my opinion) and yet the diving is good, while the topside fun is over-the-top in Key West and not too bad in Nassau. I haven't arrived in Freeport via cruise ship--maybe there are things specifically set up for cruise ship people--but my experience with the town is that there's not much for a tourist to do. Port Lucaya is a cheesy/artificial village of tourist shops.

If you strictly want to know which has the best diving, then go with Stuart Cove's from Nassau as DocVikingo recommends above.
 
If you have never done the shark dive with Stuart Cove that would be my pick. Just did it in Sept. and it was by far one of the most exciting dives I have done to date. If you like seeing large animals up close it is one to do. Make sure you pack you camera. Great dive co. to deal with and they pick you up right outside the port gate. You will probably have to book it directly thru them because most cruises will not offer the shark dive.
