well... the knight is either a man or a woman... so that would be two men and a woman or two women and a man

No, the riddle is:
One Knight, a man, and a woman got in a boat...... who were the 3 people that got out on the other side?


When you say the riddle, people assume you are saying "one night, a man and a woman got in a boat"

It is not a riddle that works on here, because the basis of it is that you are using a homophone, and playing on the assumption of what meaning people will assume for it.
 
So one that works better in type:

A man walks into a bar, asks the bar tender for a drink. The bar tender pulls out a gun and points it at the man. The man says thankyou and leaves the bar. Why was he happy?
