Although there is a lot of info to cover before you've got a decent answer to your questions, here are some links that may help regarding some info on different areas of gas management (of which SAC is a part of):

Hopefully, these help start to paint a big picture for you and help you see where SAC starts to fit in, while others start to answer your questions more specifically.

The first 10 years of diving I didn't know my SAC rate and didn't care.
With experience I knew how long a single AL80 would last at different depth.
so that wasn't a big deal. Most of my dive buddy used more air than I did so I would
always come out with minimum 1000 psi.
When I move to more Advanced type of diving I did not have a choice to know it and why it is so important. All the good info is in the links that Headhunter provided to you

Cheers
