I wouldn't completely rule out Coral Divers, I would just talk to them first about your expectations and the others joining you on the boat.
The other places I saw were Mundaca Divers and Sea Hawk Divers (though I went into Sea Hawk and the guy working didn't seem to be very professional). I never talked to Mundaca.
From my perspective, as a first-timer in Isla Mujeres, the damage from Ivan seemed to be pretty minimal. I understand that the Avalon had quite a bit of damage to its restaurant patio, but it has been completely replaced already. The only other thing people who lived there told me, was that the beaches have all changed quite a bit, losing sand in places gaining it in others. Otherwise, it looked great to me.
Enjoy your trip. If you want a good, cheap, lunch or dinner sometime while you are there go to Cocina Economica. It's a little blue and white hole in the wall on one of the main streets (Juarez or Hidalgo, I think). The guy is basically cooking out of his kitchen. When we ordered beer, he had to go the store and buy it. The chicken fajitas were delicious and about 50 pesos.
