How do you wind up DSMB while ascending?

… or you could use a reel ;-) Works pretty well once you are deeper and need to deploy from the bottom.
I use a reel all the time while I am solo diving with a flag in Boynton Beach, works perfectly. Good, controlled ascent. I use a Manta Jr with a stop, similar to the Kent Tooling.

If you have something like Kent Tooling reel, it will lock itself. So you can let it be, do things with both hands and then again grind it up a bit, then dump gas, repeat as needed - easy in 3 meter increments and more if deeper. Also useful to fight sea monsters as it’s super heavy 🙄 .
 
If you reel in one direction (i.e. wrapping towards yourself, or away from yourself) it seems like the line gets more kinked. I'd recommend reversing the direction by rotating the spool every 10 rotations or so. . .

Interested in the premise of OP's question. Normally the DSMB is deployed at the safety stop. But OP asks about deploying from depth, meaning to me that this is not the planned end of the dive.
So.... What procedure for deploying DSMB from depth at the beginning of a dive. Especially in a worst case scenario, thick wet suit, full tank(s), minimal bottom time, so safety stop will be voluntarily omitted.
In this case, I would probably deploy DSMB to the surface, lock and drop the reel, and use the line simply as an ascent line. If possible and safe once at the surface retrieve the line and reel.
 
i think you are overthinking it.

just wind up while ascending. occasionally you'll feel like you need to dump air from your bcd at which point you can use the hand that isn't holding the spool to do it.

i wouldn't bother dumping gas and becoming negative before ascending unless you want to swim the entire way up. just let your buoyancy do the work for you.

This really depends on where you dive. UK skippers typically ask divers to deploy from the bottom when leaving a wreck. On drift dives you may even be asked to deploy as soon as you hit the bottom. Deploying at safety stop is unheard of. So you may be asked to deploy from 30-40 meters / 90-120 feet, reels are handy.
