Damn manatees. If they didn't taste so good I'd be upset about Blue Springs in Orange City being closed for winter.

They're a little stringy, but reminds me of beef. I had it in a stew as a little kid. BTW, one time when I was choking down a sandwich from the Blue Spring Cantina, they had a person doing surveys. She asked me how mine was and I told her it reminded me of manatee and she simply moved on to the next person who couldn't seem to stop laughing.
