I really do prefer a "full-service" boat where I can hand my camera up to somebody and know it is being taken care of.
Jason (Ambassador) shoots a housed 5DMKIII. I doubt there's many people that know more about camera handling than them. ;)
 
As for shore dives? I hope you can scare up some buddies. It's usually tough to find buddies in the afternoon(but). I highly recommend turtle reef followed in 2nd, sunset house for a afternoon dive. The reefs get a lot of afternoon light. Follow up with happy hour and a gorgeous sunset........ (And conch fritters).

Of my most memorable dives, turtle reef claims several of my top ten.
 
I know this might be a little late, but we chose our operator from this thread before our trip last month to Grand Cayman. The post recommending Indigo Divers was spot on! We just got back from a weekend of great dive trips with Indigo and the entire experience was amazing. The boat was the most comfortable dive boat we have ever been on and the small group of 6 divers was perfect. Both Katie and Chris (as this is a small family run dive operation) went into the water. Chris led a group on deeper initial dives and my daughter (14) and I dived with Katie. On one of our dive trips (a private charter day), my wife and younger daughter joined us and they were able to snorkel (USS Kittiwake and Killer Pillar) while we were diving. The weather, dive sites, and critters were also great. Indigo was exactly as described on their website – they stored our equipment for the entire weekend and had it on board for our dives, pick up and drop off at our hotel everyday was easy, avoided crowded sites, and underwater they pointed out everything there was to see and then offered any explanation requested when topside. The critters were cool – eagle rays, morays, turtles, garden eels, lobsters, and so were the dive sites – beautiful corals, swim throughs, and of course the wall. On one of the dive days it was breezy and little cool (80 instead of 85), so Chris put up clear side curtains that kept the seating area on the boat sunny and warm. This year we have logged 16 dives in Puerto Rico, USVI, and the Cayman Islands – Indigo was clearly a top-notch operator.
