I just got back from Grand Cayman, and really enjoyed the diving. Best visibility I have ever seen and warmest water I have ever dove in. We also dove with Living the Dream -- many of the same sites mentioned by the OP. While I guess it is true that there was not a lot of "big" life (sharks, etc.), there were plenty of colorful reef fish -- what I would call "aquarium" dives. Living the Dream did a great job -- good guides, good boats, good rental gear. I haven't been diving long enough to know what the coral looked like in the good old days, I guess, but I thought it was interesting. Still windy from the north and east, so we were basically diving the sites off of Seven Mile Beach. Kittiwake and Big Dipper were most impressive.
We also had a chance to dive twice at Turtle Reef\Cracked Conch where Indepth Watersports runs the dive shop. Very solid shore dive and enjoyed that also. First time conditions were a little rough -- almost had the place to ourselves. Second time was packed with people -- a little hectic getting rental gear, but the operators were friendly and helpful.
The restaurants on the island were extremely expensive. Still, food was good, people were friendly, and we had an excellent time. Hopefully will get back some day.
