Worry Free Vacations, also. Check out their specials and red hot deals. We saved a bundle on our package by choosing a no-frills hotel, also. I'll let you know if I see anything outstanding. (And also how the no-frills hotel goes, lol!) Also, sign up for Fun Jet and WFV's email specials. They'll alert you to the weekly specials, sometimes one-day deals, etc. Good luck!
Your LDS should be able to set up a good package deal for you. They can check on the best air / hotel deals. They also have information on hotels and dive operators that will suit your preferences.

Sometimes bayadventures.com has some cheap airfare from DFW also

I fly DFW to CZM on AA, because I have to.....

I flew AA last time and it was super easy. Booked my own hotel (Reef Club) and was pretty happy with the deal!
