CDuffey - to answer your question, I would imagine that what you are referring to are their nostrils.
Moray eels had pretty bad vision and rely heavily on their sense of smell for hunting.
 
I love looking at all these cool photos! Out of curiosity, perhaps gauged by my intuition from various interactions, but I would love to know what other divers feel about which eel types seem to have the most pissy disposition and which seem to have a more easy going and friendly disposition? I personally feel the spotted ones are in the first category, the green ones in the second.

The brown spotted moray eels seems to be more aggressive at times. The Green morays less so but come out into the open more.

I think they are all basically blind and will easily mistake a finger for a hotdog. I do not find any of them very aggressive, just do not feed them.
