Although I generally agree with you, in the hands of a good mechanic, a quality adjustable wrench is no worse than an open end wrench. The problem is usually a poor quality wrench, misadjusted, and the application of too much force for the task. The other drawback is thin nuts or narrow space where the bulk of the adjustable means one cannot access the nut. A cheap open end wrench can cause the same damage an adjustable in the hands of a novice, or someone in too big of a hurry using too much force.
