Hi everyone,
Is it true that HP tank has to go with DIN, LP tank can go with either DIN or yoke?

Yes, but modern US HP tanks have had their service pressure reduced from 3,500psi to 3,442psi which allows the use of convertible valves.
 
when you said convertible valve, does that mean the adapter to convert a yoke to use DIN valve?
 
Convertible valves, also called "pro" valves, are DIN tank valves that have a threaded insert that screws in with an allen key to effectively convert the tank to a yoke valve. See here.

So basically, 3442 psi tank can be used with a yoke/convertible valve, above it has to be DIN? Exception is the PST hp tank/valve, right?

It does not matter what pressure when it comes to DIN or yoke, it matters what style the valve is.
 
A 300bar DIN valve can't really be converted to yoke. They make adapters for filling them, but they won't accept an insert to convert to yoke and they won't have the dimple on the back for the yoke screw to center on. It's tough to tell the difference without a comparison, but the 300bar DIN is noticeably deeper than the 232bar DIN. I believe its required to have the 300bar valve on 3500psi and above in the US
