Dive Palancar was running afternoon dives out of Aura/Sabor last Oct/Nov regularly. Lots of single tank trips - seemed odd to me. Not sure what they do at the Occidental Grande - their webpage does have single tank trip schedules. Same in house dive op for both properties.
Our dive op (not Dive Palancar) won't run afternoon trips unless they have minimum number of divers and if so we can arrange arrange two tank dives. The dive op also has to come south to dive there as opposed to Dive Palancar which is already there.
 
We are in the same time zone as you are (Central) which usually is the same as Cozumel time. I too like to sleep to 8-9am but find I adjust easily to island time. Waking up at 3 am on the first day to get ready to catch the early flight along with everything else usually puts us in bed early our first night. Subsequently we wake up "early", like 7am and are well rested. Do a dive op that picks you up at your hotels pier, or close by, and you can maximize your rest. Its all about how long you sleep not what the hands on the clock say.
 
The in house dive shop of that resort has a shallow reef trip at 10.30 for 1 tank and you could and second shallow tank in the afternoon at around 3.30 pm. Their deep dives are at 09.00 am and 02.00m pm, try to not do a reserved profile!
