We did a week in the Bahamas (liveaboard) with our 5mm's and they were fine - never got too warm in the 72*F water. Since they're what we have for now, we've used them down to the high 50's/low 60's by layering with 3mm core warmers. Note that this was with Hyperstretch that's known to be a little less warm than some others.

As others mentioned, it's hard to be too warm in the water. You can always let a little water in if you're feeling the need to. If you're not warm enough though, there's not much you can do about it once you're wet! (Well, except Pee, but that doesn't last too long :D )
