It is harder to scratch stuff, but you can still scratch things. Wood and nylon work well also and are even safer, but sometime you need a relatively stiff tool and brass and steel have their place.
 
Most regulators are main of brass that are chromed plated. If you're using a stainless steel pick, you can often scratch or gouge the sealing surfaces on regulators. Stainless steel is much harder than brass and you can easily scratch it.

When working on scuba equipment, you want to use a brass, plastic or wooden pick so to be careful not to scratch or gouge any of the surfaces.
