I've had great experiences with Capt. Gary at Conch Republic in Tavernier. They are extremely nice and very accommodating.
I used to use Capt. Redneck (John Riddick) at Tavernier Dive Center. He then sold the operation and "Shadow". TDC continued to be a good place to use, but Conch Republic has been where I've used the past few years.
