Personally, I'd love to see Sam Eliot and Tom Selleck do more Westerns. They were good together in The Louis L'Amour adaptations like the Sacketts and Shadow Riders, but want to see them on the big screen and not TV movies.
My favorite modern big screen Westerns are Unforgiven, Dances With Wolves, Quiggley Down Under and my favorite being Silverado, as it had everthing in it, comedy, romance, mystery and action.

But, to answer the question directly, post 1970:
I never considered this one 'modern' as it was made before I was born, but if we're talking 'post 1970', then High Plains Drifter is a classic for me. And Pale Rider is great too.

all these Sergio Leone movies:

A Fistful of Dollars
For A Few Dollars More
The Good, the Bad, and the Ugly
Once Upon A Time In The West
A Fistful of Dynamite (Duck you sucker)

and a special place for this comedy: My Name Is Nobody

Unforgiven, by Clint Eastwood who was the main actor in the 3 first of these movies, was dedicated to Leone btw

ScubaTexan:
Silverado, Tombstone and The Long Riders are my three favorites.

Silverado, bar none.
