My buddy's flight is 2 hours before mine, and we're arriving 3 hours in advance of his... 5 hours before my flight. If I check in and go through security early, is there any place on the other side for food / drink? If so, how inflated are the prices inside? Or should I say adios to my buddy early and wait for 2 hours outside the terminal before trying to check my bag?

I'll have the completed vuelaseguro form and QR code, and the Verifly clearance with negative covid test result all done. (Well, I'm hopeful it'll be negative!)

(2.5-3 hours in advance was strongly recommended by the pilot as we arrived in Cancun; I guess the various new protocols, etc. have led to more chaos than usual.)

I've never in my life arrived at an airport 3 hours in advance. That's mostly butt-covering. As if a pilot would know best. The key element is getting your bags checked at least 60 minutes before departure and there could be a line. Two hours is plenty. But there are plenty of places to eat or drink in the secured area of the terminals. Prices are pretty high compared to outside the terminal but about average with a US bar or restaurant. If thee company of your buddy is desired there will be places to hang out.

Good places to eat. Water is $5 more or less cause you can't drink from the tap and you can't bring it in.

Cancun needs 45 minutes to clear bags (at least @ T3), its not an individual airline thing but the terminal processes timing (I have been told by employees that they don't like to accept them below 45 minutes because with less than that they may not make it to the plane) but I believe the official time is 1 hour. With the Verifly App pre approval the counter staff just glances at it and immediately approves it, same with the security check point with the vuelaseguro form on your phone, you need to understand none of these people actually care, they just want to process you thru.
I find arriving early to the Cancun airport to be very depressing, $20 hamburgers and $5 water with lots of really flaky all inclusive beach tourists. Kind of like a big Carnival cruise line terminal.
 
Yup, 2.5 hours was way more time than we needed. VeriFLY app made it easy. Security was fast.
 
The food and drink was OK quality but a major, major ripoff. We had been (pre pandemic) in the interior of the Yucatan and never managed to spend more than US$50 / MXN1,000 on a meal for 3, even eating and drinking without regard to cost. So it was a real shock to see CUN charging not just US prices, but US airport prices. US$5 for orange juice from concentrate. We didn't really have a choice, though, we headed out early in the morning from south of Playa del Carmen (90 minutes from the airport) and didn't have time to eat.

I think the food is cheaper in SeaTac
 
Keep in mind the terminals are geographically separate so you can't travel among them after clearing security.

3 hours ahead is preposterous, and i have an extra step prior to departure that neither tourists nor Mexicans have. I'll show up 90 minutes ahead if I have luggage to check.

I like Berryhill, but the one outside security. Decent prices and good food. Past security prices will make your eyes water.
