Note that training in the pool vs. open water will depend on where you're taking the class. I'm only aware of doing it in the ocean, for example. So if you want a particular setup, I'd inquire with your prospective instructor about what they do.

So it is possible for a students to use doubles in open water without first using it in the pool?
 
That is absolutely possible. There is nothing in the standards to indicate that a pool should or should not be used.
 
I'm sure its going to be either/or as you're typically doing the primer in a single day. I'd also expect "open water" to be the calmest little cove / quarry / spring / lake based on your locale. No one, a GUE instructor in particular, is going to suggest you try out a new tank configuration in a challenging environment.

If you're already familar and comfortable diving a BPW with a single tank, you're likely not going to find doubles that much more challenging except:
1) New valve drill to learn
2) Adjustments required to bouyancy and trim with the extra tank weight and all of the extra brass behind your neck

A GUE instructor working with you for a day doing a doubles primer is an excellent way to square away the above, and I don't think it would much matter whether you're in a pool or a pond.

In general, yes. In the specific case, the instructor and the student will have a chat. I'm not a GUE instructor, but I suspect that if they feel that it would be unsafe to take the student diving in shallow ocean water with doubles they might use a pool, or they might suggest the student is not ready to do this workshop.

This is a certified diver we're talking about. Diving with doubles is not that different from whatever they have done before.
