I stayed at Akumal Beach Resort last January for five nights and enjoyed it very much after staying four nights on Coz. Very nice rooms, great swimming beach, and the food buffet had good variety and was well prepared. I used the dive shop on premises for a couple of local dives and a cenote dive at Chac Mul. It's an international company that owns the resort and the couple that were working there were probably moving on last month but they were great! It was fairly convenient to get up to Playa on the bus. You might consider splitting your trip between Cozumel and Akumal as the best time to dive in Coz is early.
