Can folks recommend resources for learning about underwater archeology as someone who has no intention of doing it for a living? I would like to learn more about identifying and dating wrecks, and also how the "pros" go about documenting them.

I would suggest looking at the Nautical Archaeology Society website particularly the pages concerning its publications and its training program which offered globally and which has providers in both Canada and the United States - please refer OUR TRAINING PARTNERS
 
Identify the wreck first, then try to find who paid the loss if it was insured and then buy the rights to it. With that done on the quite find out who are the local archaeologists with a view to doing a survey and dig. Insurance companies are only too happy to offload liability so buy it with a company if you don’t want to lose your house if someone gets hurt.
