I was going to buy a vest for layering for our Belize trip, but I abandoned that idea and simply went to a 5mm full suit. Quite a few folks on our liveaboard in Belize had only brought 3mm suits and after the second day were wishing they had thicker suits. Fortunately the liveaboard could help out, so nobody was terribly cold during the trip.
The water was 79 degrees, we dove 4x a day, and I was comfy in my 5mm all week. My husband wore a 3mm full and only started getting chilly on the last day, so everyone's exposure protection varies. We have since bought him a vest to layer since we'll be doing repetitive diving in 76 degree water this December, which is just enough colder that he decided having the ability to layer is important.
