Eh, technically it belongs in the Food and Recipes Forum.
But either way - you can put them in a freezer to prolong the freshness. I wouldnt do it more then a month or two though..

Assuming the can is opened (or they're homemade), roasted peanuts can be stored in the freezer for six to 12 months. If the can in unopened, then I don't believe it will make much difference, since oxidation is limited by the amount of air in the can.
